KIWI MUFFINS

Ingredients (for 12 muffins)

• 
  
• 2 eggs
• 1/2 cup sugar
• 1/4 cup oil
• 4 large very ripe kiwi, mashed
• 1/4 teaspoon vanilla
• 1 teaspoon lemon juice
• 3 cups flour
• 1 1/2 teaspoons salt
• 3 teaspoons baking powder
• 1 1/2 tespoons baking soda

Directions

1. Preheat oven to 350ºF (ca. 180 Grad) grease 12 count muffin pa
2. Blend the eggs, sugar and oil. Then add kiwi, vanilla and lemon juice
3. In a seperate bowl combine flour, salt, baking powder and baking soda.
   
4. Mix well, then fold into the wet ingredients
5. Fill muffins cup and bake for 25-30 minutes
